Happy Independence Day!
The day started at 5:30am! I had prepped the day before, so this morning I got up and put the pork shoulder in the oven at 5:30am and let it cook "low and slow" in the oven at 121 degrees for about 8 hours.
I had cooked the potatoes and eggs the night before, so I put together the potato salad after the shoulder was in the oven.
And when the roast was finishing up, I peeled and sliced a bunch of fresh peaches and whipped up a peach cobbler.
The menu was a trial for the wine party we are planning later in the summer. I think it all turned out just fine.
